Michele’s Leprechaun Mashed Potatoes
Ingredients
6 large potatoes, peeled & cut in chunks
8 oz frozen peas
Salt & pepper to taste
A tablespoon or two of milk or cream (optional)
A knob of butter (optional)
Preparation
Put potatoes in a pot and cover with cold water. Bring to a boil. Reduce heat to medium low and cook for about 15 minutes or till tender. Steam or cook peas till just tender. Do not overcook peas or the color won’t look right.
Drain and then mash potatoes with salt & pepper to taste. Puree peas in a blender or food processor. If you prefer the peas a little chunkier, mash them thoroughly. Mix peas into potatoes. Add milk or cream, if needed. Put in serving bowl and add a knob of butter on top. Serve hot.

No leprechauns were harmed during the making of this recipe. But they would love to eat the potatoes on St. Patrick’s Day – if you can catch them!

Love it, Michele! I’d recommend leaving a bit out for the leprechauns… you won’t see them, but they’ll eat it.
